3 large russet potatoes
4 cups vegetable oil for frying

Method

1 Peel the potatoes and slice them into paper-thin rounds using a mandoline slicer.
2 Soak the slices in a large bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat the slices completely dry with clean kitchen towels.
3 Heat the vegetable oil in a heavy-bottomed pot or deep fryer to 350°F (175°C).
4 Working in small batches, fry the potato slices for 3 to 5 minutes, turning occasionally, until they are golden brown and crisp.
5 Remove the chips with a slotted spoon and drain on paper towels.
6 Immediately sprinkle generously with sea salt while the chips are still hot.
