• 4 potatoes cut into ½ inch cubes
• 0.25 cup olive oil
• 4 eggs
• salt
• pepper

1. 1 Peel and cut the potatoes into very small cubes.
2. 2 Fry them in hot olive oil until they are cooked.
3. 3 Remove the potatoes and empty the hot olive oil in a metallic bowl.
4. 4 Return the potatoes back in the frying pan with 1 tablespoon of the hot olive oil and add 4 eggs.
5. 5 Season with salt and pepper and mix until the eggs are cooked.
